Makes: 6-8 skewers





SATAY INGREDIENTS

  • 1 Package of Tofu

  • 1 Red Bell Pepper

  • 1 Green Bell Pepper

  • 1/4 Red Onion

  • 1/2 C Coconut Milk

  • 1 T Maple Syrup

  • 1 T Liquid Aminos

  • 1 tsp Curry Powder

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Ground Ginger

  • 1/8 C Minced Cilantro

  • 1 T Chopped Peanuts

  • Sesame Oil, for cooking

PEANUT SAUCE INGREDIENTS

  • 3/4 C Powdered Peanut Butter and 1/2 C Water

  • 1 1/4 T Liquid Aminos

  • 1 tsp Garlic Powder

  • 1/4 C Maple Syrup

  • 1/2 T Rice Vinegar


INSTRUCTIONS

  • Begin by opening your package of tofu, draining the water, and placing the entire block in your TOFUDEE tofu press. Tighten the lid to squeeze out the excess water while you’re chopping the vegetables and preparing the marinade.

  • Chop both bell peppers and the onion into 1-inch squares and set aside.


  • Prepare your batter by combining the coconut milk, maple syrup, liquid aminos, curry powder, garlic powder and ground ginger in a bowl and mixing well.


  • After about 15 minutes in the TOFUDEE tofu press, open and remove the tofu, chop it into about 1-inch cubes.




  • Combine the tofu and batter in a bowl and mix well.


  • Get out your skewers and add a piece of tofu, then a piece of each pepper, and a piece of onion. Repeat the pattern until the skewer is mostly covered.

  • Add sesame oil to a skillet on medium-low heat. Once the oil is warmed, add the skewers. Cook on all sides until browned.

  • While the skewers are cooking, combine all of the peanut sauce ingredients in a bowl, mix well and set aside.


  • Once the skewers are done, serve with peanut sauce and garnish with optional cilantro and chopped peanuts.
