We are happy to introduce one of the Chiptole menus today.
1 block of extra firm tofu
For the Sauce
1/2 cup chipotle peppers in adobo sauce
2 tbsp. tomato paste
3 cloves garlic
Juice of 1 lemon
2 tbsp. olive oil
1 tsp each: salt, oregano, cumin
1 cup of water
For the Fillings(depends on your favor)
1/4 cup of onion
1/4 cup of corn
1/4 cup of black beans
1/4 cup of brown rice
Press tofu for 30-35 min.
Place all ingredients except for tofu in a blender and blend until smooth.
Crumble your tofu in a medium pan and sauté over medium heat until the surface turns golden.
Add your sauce to the pan.
When it begins to simmer turn to low heat and reduce the mixture until the tofu has soaked up the sauce and there is little liquid in the pan.
Place the fillings in the bowl.
