Green, green, green! It's the color of growth, health, nature, and luck. If you want four elements in one dish, this is it! The collaboration of silky noodles with crispy garlic tofu is packed with protein and will fill you with the energy you need to tackle your day. We bet that you can't find a delicious healthy pasta dish quite like this one in any restaurant. It's quick, refreshing, and will be extra satisfying for these hot spring days.

For Avocado Pesto:
1 ripe avocado
1/2 tbsp minced garlic
1/4 cup fresh basil
1 cup spinach
2 tbsp nutritional yeast
2 tbsp extra virgin olive oil
1 tbsp lemon juice
3/4 cup reserved pasta water
salt & pepper, to taste
For Crispy Tofu Toppings:
1 block of tofu
1/2 tbsp garlic powder(you can cut the garlic powder to 1 tsp for a more subtle garlic taste)
1 tbsp paprika powder
1 tbsp olive oil
2 tbsp cornstarch(flour is okay as well)
salt & pepper, to taste
For the pasta:
4 oz of Spaghetti noodle
1/2 cup cherry tomatoes
Instructions
Start by pressing tofu with the TOFUDEE tofu press while preparing other ingredients.
Cook the pasta according to package instructions.
Using a blender, add all pesto ingredients and blend until you get a smooth pesto. We recommend gradually adding the 1/4 cup of pasta water until you achieve your preferred texture.
After the tofu has been pressed, cut it into small cubes and add them to a bowl. Add the rest of the crispy tofu ingredients and mix well.
In a large pan on medium heat, drizzle oil and fry your tofu cubes until they get golden and crispy.
Add the cooked noodles in a bowl and toss with avocado pesto. Place crispy tofu and cherry tomatoes on top. Sprinkle pepper and some fresh basil.
