Rainbow Tofu Skewers

Ingredients


  • 1 package of tofu

  • 1 pineapple

  • 1 red onion

  • 1 carrot

  • 1 yellow zucchini

  • 1 Broccoli

  • Cherry tomatoes

  • Blueberries

For the tofu marinade

  • 1 tablespoon garlic powder

  • 1 tablespoon paprika

  • 1/4 cup low sodium soy

  • 1/4 cup olive oil



Instructions


  • Press tofu for 20 mins, wash all the vegetables and fruits while pressing tofu.

  • Cut the tofu and let it marinate for at least 1 hour with paprika, soy, garlic, and oil.

  • Cut according to your preference, but make them small and even cuts so they will all cook faster.

  • Then make the skewers with bamboo skewers, place the vegetables and fruits in order of colors so the rainbow skewers will remain.

  • To cook the skewers, take them in the oven for approximately 20 minutes at a temperature of 360°F. They can also be made on a barbecue or a pan with a little olive oil.
