One of the best things about Fall is that you can always warm yourself up with a bowl full of noodles anytime of the day. If you’re looking for a handsome bowl of veggie goodness and a dash of tofu yum, this recipe takes the cake! Just use your favorite veggies at hand and some stir fry noodles of your choice and voila, you get some really delicious noodles just like the one you would get at a restaurant.
Prep Time: 20 mins
Cooking Time: 10 mins
1 block of extra-firm tofu, diced
10 oz. of Spaghetti noodles, cooked
⅓ cup of Red bell peppers, cut in slices
⅓ cup of Green bell peppers, cut in slices
⅓ cup Spring onions, chopped
1 tsp of Red chili flakes(optional)
1 tsp of Paprika
1 tsp of Red chili paste
1 tsp of Green Chili sauce
2 tbsp of Soy sauce
Salt and pepper to taste
Start by pressing your tofu for around 15-20 minutes.
In a large pot of boiling water, add salt and let the noodles, cook till al dente.
In a pan on medium heat, add oil and let it heat. Add in the tofu pieces and fry for 1-2 minutes.
Add in the Red Chili Flakes and stir for a minute.
Now bring in the red and green bell peppers and the spring onions. Keep stirring so as to not burn the mixture.
Now add the soy sauce, green chili sauce and Red chili paste. Mix well to incorporate the sauces evenly.
Add pepper to taste and bring in the cooked noodles. Mix well.
Lastly, add some Paprika for extra spiciness.
Garnish with some dried parsley
