Here’s another healthy and leisurely breakfast recipe, Tofu Pancake. Enjoy a day ahead!

Ingredients
1 block soft tofu
1/2 cup of milk(any kinds of milk)
1 egg(if you are not using egg, you may add 1/4 cup of milk)
1/2 cup of rice flour
1.2 cup of buckwheat flour
2 tsp. baking powder
2 tbsp. sugar
2 tbsp. vegetable oil
Instructions
Press tofu for 20-25 mins
Whisk tofu with milk until smooth, add sugar.
Mix rice flour, buckwheat flour and baking powder with tofu mixture. Blend until smooth, add vegetable oil.
Heat the pan on low heat, add ½ tsp of vegetable oil to prevent the pancake from sticking.
Place the pancake mix on the pan and fry until both sides are golden brown.
Sprinkle any toppings (blueberries, strawberries, banana, etc.) and ready to serve!
