We all know how powerful Ginger, garlic & Turmeric are…they are considered as superfoods in many cultures. In this classic Tofu Peanut Butter Curry, we added those superfoods to make it an immune-boosting recipe! Feel free to add any spices of your choice to make it even more flavorful.

Ingredients
1/2 block Firm Tofu
2-3 tbsp Peanut Butter
1 tbsp grated Ginger
1 tbsp grated Garlic
1/2 Onion chopped
1/4 cup Spinach
1/4 cup Cilantro
1/2 tsp Cumin seeds
1 tsp Turmeric Powder
3 tbsp Cooking Oil
Salt & Pepper as needed
Instructions
Chop pressed tofu into small cubes and keep aside.
In a pan, add oil, once oil is hot, add cumin seeds, turmeric powder and saute for a half minute ( do not burn cumin seeds )
Add chopped onion to the pan and saute for a minute. Add grated ginger, garlic and saute for 2-3 mins till onions turn transparent.
And peanut butter to pan and mix till well combined with onions mixture.
Keeping the flame at medium, add chopped tofu, 1/2 glass water/milk and mix till thickens.
Add spinach, cilantro, and mix together. Based on your taste add salt & pepper and simmer with lid closed for 15 mins ( add more milk or water if needed ).
Serve hot with rice or naan bread!
