Tofu Peanut Butter Curry

We all know how powerful Ginger, garlic & Turmeric are…they are considered as superfoods in many cultures. In this classic Tofu Peanut Butter Curry, we added those superfoods to make it an immune-boosting recipe! Feel free to add any spices of your choice to make it even more flavorful.

Servings: 1-2


  • 1/2 block Firm Tofu

  • 2-3 tbsp Peanut Butter

  • 1 tbsp grated Ginger

  • 1 tbsp grated Garlic

  • 1/2 Onion chopped

  • 1/4 cup Spinach

  • 1/4 cup Cilantro

  • 1/2 tsp Cumin seeds

  • 1 tsp Turmeric Powder

  • 3 tbsp Cooking Oil

  • Salt & Pepper as needed


  • Chop pressed tofu into small cubes and keep aside.

  • In a pan, add oil, once oil is hot, add cumin seeds, turmeric powder and saute for a half minute ( do not burn cumin seeds )

  • Add chopped onion to the pan and saute for a minute. Add grated ginger, garlic and saute for 2-3 mins till onions turn transparent.

  • And peanut butter to pan and mix till well combined with onions mixture.

  • Keeping the flame at medium, add chopped tofu, 1/2 glass water/milk and mix till thickens.

  • Add spinach, cilantro, and mix together. Based on your taste add salt & pepper and simmer with lid closed for 15 mins ( add more milk or water if needed ).

  • Serve hot with rice or naan bread!
