This easy-to-prepare Tofu Ramen recipe is sure to satisfy your ramen cravings even during busy days. The sliced mushrooms and the pan-seared tofu give the broth plenty of umami flavor.

INGREDIENTS
1 block extra firm tofu pressed and sliced
2 tablespoons vegetable oil
100g fresh Baby Bella mushrooms, sliced
1/2 cup Mongolian Garlic Sauce (or your favorite teriyaki sauce)
1 cup vegetable broth
1 package of instant ramen noodles
8 scallions cut into pieces
INSTRUCTIONS
Start by pressing the tofu using your TOFUDEE Tofu Press for 15 to 30 minutes.
While your tofu is being pressed, slice your mushrooms.
Place broth in a large saucepan and bring to a boil over high heat.
Reduce heat to medium, add the mushrooms, and cook until the broth is almost completely reduced.
Once your tofu is pressed, slice into even strips & coat evenly with your sauce.
Heat the oil in a medium frying pan over medium heat and cook the tofu for 2 mins on each side or until golden.
At this time you can begin to prepare your ramen according to the instructions on the package.
Once the ramen is ready, top with the sliced mushrooms, and pan-seared tofu.
Garnish with some scallion pieces.
