This tofu Tex-Mex Bowl recipe is very nutritious, with its grain, protein and vegetables. If you want you can double the recipe so that you will have leftovers that the whole family's lunch can bring for lunch.
The best thing about this kind of bowl is that you can vary the ingredients. For example, you can change the quinoa, for rice, add avocado, etc. All you have to do is let your imagination go wild!

Ingredients
1/2 cup quinoa rinsed
1/4 cup corn(frozen or not)
2 tbsp. olive oil
1 tsp. chili powder
1 tsp. garlic powder
14 oz. extra-firm tofu
1 onion chopped
1 pepper chopped(color of your choice)
1/2 cup salsa
Green onion chopped
Coriander to garnish
Instructions
for the quinoa
Cook quinoa according to package instructions. Once cook adds the corn, mix well.
for the bowl
Preheat the oven to 375 ˚F
Press tofu with Tofudee Tofu Press for 25-30 mins. then cut in a cube shape.
In a bowl, mix olive oil, onion, and pepper.
Place on a baking sheet and cook for 20 mins in the oven.
Build your owl starting with the quinoa, tofu mixture, salsa and garnish with green onion and cilantro.
