Easy to make recipe that is great as a side dish or as a salad for weeknight dinners. The use of chickpea flour with tofu gives it a nutty flavor that goes very well with pesto. Serve this to your non-tofu lovers with confidence!

1 Block Tofu
2 tbsp Chickpea Flour
1 tsp Salt • 1 tsp Pepper
1 cup Basil Leaves
1/4 cup Walnuts
1/4 cup Olive Oil
1/2 a Lime Juice
2 Garlic Cloves
Press tofu for 20 mins.
Chop tofu into cubes and place them in a baking tray.
Add chickpea flour, salt, pepper, 2 tbsp olive oil and mix well to evenly quote all tofu cubes.
Bake at 350'F for 35 mins, flip tofu in between for equal crisp.
In a blender add basil leaves, walnuts, olive oil, garlic cloves, salt, pepper, and coarse blend.
When tofu and pesto are ready to mix both together and serve warm.
