We would like to introduce a healthy power salad to help everyone cool down during these hot summer days. It is definitely a fun mix of crumbled tofu and little pops of juicy fresh blueberries in your mouth. The hint of garlic with balsamic dressing is the perfect balance of smooth savory with sweet fruits. You'll end up wanting to make this salad all summer long.

Cook Time: 10 mins
1 block of firm tofu
1/2 pack spring mix
for salad dressing:
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tbsp dijon mustard
1 tsp minced garlic
Start by pressing tofu and set aside.
In a medium-sized bowl, add balsamic vinegar, dijon mustard, minced garlic and olive oil. Mix well and set aside.
Slice a small beet into half-moon shapes. Place a baking paper in the air-fryer, space out the beets, and add salt. Cook at 360°F for 10 minutes.
Take out the pressed tofu, place it in a bowl, and smash with a fork until it resembles crumbled feta cheese.
Cut the nectarine.
Assemble the veggies, blueberries, beets, nectarine, and lastly, the crumbled tofu. Drizzle dressing and enjoy!
