This simple, quick, and delicious Watermelon and Tofu Salad is sure to become a summer favorite. It’s so refreshing and definitely perfect for your next lunch party.

  • 4 cups of chopped watermelon

  • ½ cup salad green

  • 1 block firm tofu

  • ⅓ cup olive oil (extra virgin)

  • 3 tbsp balsamic vinegar

  • 1 lemon juice

  • 2 tsp oregano

  • 2 tsp thyme

  • Salt (to taste)

  • Pepper (to taste)


  • Begin by pressing the tofu with your TOFUDEE Tofu Press.

  • Next, crumble the tofu in a bowl and whisk in olive oil, balsamic vinegar, lemon juice, oregano, thyme, salt, and pepper until everything is well mixed. Place a lid or plastic wrap over the mixture and set it in the fridge.

  • Meanwhile, place chopped watermelon and Arrugala in a large bowl.

  • Use a fork to retrieve the tofu from the marinade and place it over the salad.

  • Drizzle the remaining marinade over the salad as wanted. Finish off with a squeeze of fresh lemon.
