Santa Fe Tofu Wrap

If you love to include a wide variety of plant-based ingredients in your diet, you should try this simple wrap today.



When searching for tofu recipes you will find that most of them include soy sauce. We created something different and a little spicy with soy sauce. We believe everyone loves fajitas and wraps so we decided to use tofu in the spicy fajita wraps. These wraps are colorful, flavorful and packed with plant-based goodness. This recipe makes a great lunch and can be prepared ahead of time as part of your weekly meal prep.

Ingredients


  • 1 block of extra firm tofu

  • 1 small red pepper

  • 1 small yellow pepper

  • 4 whole-grain wraps

  • 1/2 cup of black beans

  • 1/2 cup of corn

  • 1 avocado

  • 2 tbsp olive oil

For the Seasoning

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp cumin powder

  • 1/2 tsp salt



Instructions


  • Press tofu for 15-20 minutes until all excess moisture is removed.

  • While tofu is being pressed mix all seasonings into a small bowl and cut peppers and avocado into thin slices.

  • Cut pressed tofu into 1-inch squares.

  • Add olive oil to medium-sized skillet.

  • Coat tofu squares in olive oil and season mix, cooking on medium heat and flipping over occasionally.

  • Cook for 15-20 minutes or until all sides are brown and crispy.

  • Once the tofu is cooked, remove from pan and cook peppers until soft.

  • Add tofu, beans, peppers, corn, and avocado to wraps spreading ingredients out evenly onto 4 wraps.

  • Fold wraps on two slides and roll into a burrito like a shape.
