This Tofu recipe is great for meal prepping! Can store in batches and arrange when ready to serve.
And also this recipe is suitable to personalize as needed, like adding nuts or veggies you prefer.

1 Block Tofu
1/4 cup Bread Crumbs
1 tbsp Coriander Powder
1 tsp Red Chilli Powder
1 tsp Cumin Powder
1/2 tsp Salt
1 cup chopped Sweet Potato
1 cup boiled Sweet Corn
1 cup Grated Carrot
1 cup Cherry Tomatoes
1/4 cup Walnuts
2 tbsp Vegan Dressing or any dressing
Press tofu in Tofu presser for about 20 min., chop vegetables while pressing tofu.
Chop pressed tofu into squares or desired shape. In a bowl add bread crumbs, coriander powder, red chili powder, cumin powder, salt and mix well.
Add chopped tofu to mix and toss well till tofu is well coated.
In a baking tray, add chopped sweet potatoes and bake at 350 F for 25 mins. In the same tray, add coated Tofu and bake for 15 mins at 350 F ( flip tofu in between for even bake ).
Arrange veggies and baked tofu in a bowl, add walnuts and dressing to serve!
Add carbs apart from sweet potato if preferred like, quinoa or rice.
Use different veggies like green beans, broccoli, spinach.
