When bored of Tofu Scramble for breakfast, try this Tofu Berry Bread. Trust us, you won't taste tofu in this recipe and in fact tofu makes this bread crispier on outside and softer inside.
Use walnuts or any other of your choice to make it even more flavorful.

Ingredients
1 cup Tofu
2 cups Spelt Flour
½cup coconut oil
1/2 cup Brown Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
2 ripe Bananas
1/2 cup Plant Milk
1/2 cup Blueberries
Instructions
Press tofu in tofu presser for 20 mins and then mash pressed tofu with a fork to get scrambled consistency.
In a large bowl, add ripe bananas and mash to paste using a fork. Add sugar, mashed tofu, milk, cooking oil, flour, baking soda, baking powder, salt and mix till well combined ( do not over mix ).
Add flour-coated blueberries to batter and fold.
Transfer the batter to a parchment-lined loaf pan and bake at 350F for 50 mins.
Serve with nut butter or as it is!
