This is the crunchy cucumber with sweet peas blends well with the soft tofu, while the fresh dill adds freshness and spice. This is definitely a quick and refreshing salad that you could easily whip up any day!

1 block of soft tofu
4 small cucumbers
3-4 small radishes
bunch of fresh dill
1 tsp sugar
2 tbsp white wine vinegar
3 tbsp lemon juice
3 tbsp olive oil
salt to taste
Start by pressing tofu with TOFUDEE tofu press and set aside.
While pressing tofu, cut cucumber, radish and snow peas. Set aside.
Prepare the salad dressing. In a medium-sized bowl, mix the sugar, salt, vinegar, and lemon juice. Mix until the salt & sugar dissolve. Then, add olive oil.
For better results when pressing tofu, turn the knob every 5-10 minutes or in between preparing other stuff, until you feel the tension.
When you have finished pressing the tofu, cut it into cubes.
Combine all the ingredients on the plate and drizzle salad dressing.
